Manchego Cheese Dreams - Makes 50
2 oz Butter (at room temperature)
2 oz Plain Flour
2 oz Manchego Cheese (finely grated)
1 pinch of paprika
Salt and Pepper
Measure out the ingredients, add the salt, pepper and paprika to the flour mixture.
Cream together the Butter and Plain Flour until crumbly.
Add the grated cheese and work the mixture into a ball.
Turn the mixture out of the bowl onto a well floured surface and gently knead.
With a rolling pin roll out into a large square or circle. Take your pastry cutter, I use a circular one that is 2 cms wide, but you can use any desired shape. Ensure there is plenty of flour underneath so the pastry does not get stuck.
Place the cut pieces onto a buttered baking tray and bake in the oven for 10 mins at 150C or until golden.
Allow to cool and place in an air tight container.
The recipe can be doubled accordingly.
